2 – 8 oz. bars of cream
cheese
1 can hotdog chili (prefer
Castleberry brand)
1 – 8 oz. bag shredded
Mexi–blend cheeses
1 – bag tortilla chips or
corn chips
Put both cream cheese bars in bottom of microwave safe dish. Microwave at 45 sec- onds as it melts to form in dish. Spread hot dog chilli on top, then cover evenly with cheese. Warm in microwave until cheese on top is bubbly. May garnish with chopped scallion, olives, or red pepper. Serve with chips.
Southern egg rollS

3 fried chicken strips,
chopped
1 can collard greens, drained
(approx. 2 cups)
1 small pkg. white shoe peg
corn, cooked and drained
1 package Andouille Sausage,
choppped
1 package egg roll wraps
Mix first four ingredients in bowl. Place 2 Tbsp. mixture on center of wrap. Roll tightly as directed. Seal end with flour and water paste dot. Deep fry until floating, brown, and crispy. Drain on paper towels.
For dip, blend one small bottle of blue cheese dressing and 1/4 cup of honey. Serve with egg rolls.

Take two dozen chicken livers and soak them in buttermilk overnight.Deep fry in flour batter seasoned with pepper, seasoned salt, or cajun spices.
Drain on paper towel. Use Heinz 57 as a dipping sauce.
ham anD poppy SeeD SanDwiCh BiteS

1/3 cup finely minced
onions
24–30 dinner rolls
(miniature buns found
in foil tray package)
1 Tbsp. poppy seeds
3 Tbsps. Dijon mustard
15 slices Swiss cheese
2–3 dashes hot pepper
sauce or cayenne
pepper
15 slices honey–roasted
ham
1/2 cup butter, softened
Salt and pepper to taste
Preheat oven to 350 degrees. Slice buns horizontally (like you would a biscuit for buttering). In bowl, mix butter, onions, Dijon mustard, and poppy seeds. Add hot pepper sauce, salt, and pepper to taste. Spread butter mixture on one side of buns. Fill each bun with half slice cheese and half sice of ham. Arrange sandwiches on baking sheet (or if using foil package of rolls, leave in foil pack.
Cover with aluminum foil and bake for 10 minutes or until cheese and butter have melted.
